The Vegan Banoffe Pie has become my absolute favourite cake.
And what I love the most, is that the vegan version of the Banoffee Pie is much more delicious than the original, and of course, it’s plant-based, naturally sweetened, filled with date dulce de leche, frozen banana slices, and topped with whipped coconut cream.
I promise nobody will ever notice the banoffee pie has no dairy or eggs!
Before you make this pie, you need to prepare your frozen banana slices, so I would recommend starting the day before. Remember you must refrigerate your full fat coconut milk can the night before.
I used store-bought gluten-free graham cookies. I bought ones from Whole Foods, but you can use any plain and dry cookie you prefer.
